Further on Valentines, here's a perfect dessert for lovers - sensual and creamy, yet light enough that it won't make you feel fat. Strawberry Dessert with Vanilla "Cream"
large container (750 ml) nonfat yogurt
1 envelope unflavoured gelatine
1 quart fresh strawberries
2/3 cup sugar
vanilla extract to taste
fortune cookies (optional)
Place yogurt in a colander lined with cheesecloth or in a coffee filter, placed over a bowl. Allow to stand overnight, refrigerated. A colourless liquid "whey" will collect in the bowl; the white yogurt "cream" will become very thick. In a small saucepan over low heat, warm 1/2 cup of whey. Sprinkle the gelatine over this liquid; stir to dissolve.
Wash and hull the strawberries. Set aside 2 cups of the most perfect berries. Combine remaining strawberries in a blender with remaining whey, 1/3 cup sugar and gelatine mixture. Blend until smooth and frothy. Divide blended mixture among four dessert glasses or bowls. Refrigerate 2 - 3 hours, until set.
Mix yogurt "cream" with vanilla, stirring with a wire whisk. Sweeten with sugar to taste.
To serve, spoon yogurt "cream" over the strawberry desserts in glasses. Decorate with reserved berries. Serve with cookies.

Looks yummy and beautiful! I tried making my own fortune cookies a couple of years ago and it was a huge fail. Not exactly sure where I went wrong.
