Iron Chefs to call Our Own

September 27 marks the 10th annual Eat to the Beat fundraiser - beautiful small tastes from 60 Toronto chefs, good wine and live music.  At $145 it's a steal; don't miss out!

A schmoozefest for corporate sponsors in June featured an "Iron Chef"-style cook-off pitting Park Hyatt Exec. Joan Monfaredi against Monsoon's Winlai Wong.

The Chefs
Joan: studied, precise.

Winlai: confident, outgoing.

A "black box" competition, each chef started with an identical box of ingredients, and a limited amount of time (1 hour).

What to do with a Giant Puffball

The puffball should be firm and hollow-sounding when tapped, pure white when sliced.  (If yellow-tinged, the mushroom is going to spores.)

a.)Simply sauteed with butter, garlic, salt and pepper (fresh thyme is good, too).

b.)Mushroom Parmesan.

c.)Grilled, diced for saucing crab ravioli (sorry, no photo, already eaten;-b).
